Coconut Oil

Do any of you use coconut oil on a regular basis in cooking? I have found many sources online about the benefits of coconut oil for people with hypothyroidism. But I am not sure about using it with cooking. The only kind I have found in stores is solid. I have read that you can use the solid form as a replacement for butter/margarine, but I don't use much of either.
Just curious and wanted opinions :)

  1. I only use coconut oil in the form of Hawaiian Tropic when I am trying to get a tan. I've heard a lot about coconut oil through blogs I read and I have yet to see it in stores around here. I think I'd have to go to Whole Foods to find it. I wonder what it tastes like? I love coconuts!

  2. I've cooked with it but only in the solid form. It's really interesting - the flavor is definitely coconutty, though it mellows quite a bit when you add other ingredients.

  4. I use coconut oil both in cooking and as a beauty product (mix with salt or sugar for a nice exfoliator!). The solid kind works just fine--just warm it up in the pan, or sit the jar in a bowl of hot water for a few minutes to melt it.
