Running Towards New Goals!

I broke another record yesterday!!! I finished my 2 miles in 25:08!  I would really like to get to 2 miles in 24 minutes before the new year! So I will be working toward that goal!!

I am still very slow and I know I won't be winning any races, but I just love working hard and beating my own times. I can really see my  improvement!

  1. congrats on breaking a new record. Thanks for stopping by my blog. I have a couple of wii Fit games. I really like the Active fit that you use the leg band with. It has some great running and jumping exercises in it. I also want the outdoor challenge one for xmas. Love your blog by the way..

  2. Awesome! Who cares how fast you go as long as you're feeling good about yourself! I am a very s-l-o-w runner, but I still call myself a runner, because I work at it and enjoy it. I'd like to run 2 miles in 24 by Xmas, too. If I can get my little toe to stop hurting, it might happen.

  5. Very good, Jessica !! I have no doubt you can make your goal by the new year too.

    You left a comment asking about Knox Box. Margene posted the recipe. It is sugar free jello, but with a twist.

    6 envelops knox unflavored gelatin mixed with 2 big packages of sugar free flavored Jello (3 oz) and 6 cups boiling water. She puts this mixture into a rectangular baking dish and refrigerates for a few hours, then cuts them into 1" squares. Then, she'll do various things to enhance it. Her three tips were:

    1. make SF orange and add 1-2 tsp of coconut extract before pouring it into the dish.

    2. Or make the strawberry-banana jello and add 1-2 tsp of banana extract to enhance the banana flavor, before pouring it into the dish.

    3. Or, make the lim jello and add coconut extract. (She liked this one, her husband didn't).

  6. Good morning Jessica! I got your comment about the butternut squash. I put about an inch of water in the bottom of the baking dish, peel the outside of the squash with a potato peeler, sprinkle on some cinammon, cover with foil, and cook at 400 degrees. I baked this for an hour...and it was very soft. If you prefer your squash a little more firm, I'd say bake it for 45 mins. I brought some in to work yesterday to share with a friend who had never tried butternut squash. She was hesitant at first, but then ate the whole piece, and said she'll be making some herself...she loved it! I think you will, too. :)

    You run for yourself so doesn't matter how slow or how fast you are. I'm not a fast runner either and look only at my own times and try to beat those.
